Ingredients for about 30 cookies:
100 gr (3,5 oz) flour 0
100 gr (3,5 oz) flour 00
130 gr (4,6 oz) peeled almonds
100 gr (3,5 oz) caster sugar
130 gr (4,6 oz) unsalted butter
1 pack of vanillin
Whisk the almonds with the caster sugar and set aside.
In a mixing bowl combine softened butter with flours, vanillin, grated lemon zest, a pinch of salt and the almonds and sugar mix.
Knead fastly and shape a ball.
Wrap the dough with the cling film and put it in the fridge for 30 minutes.
After the resting time heat the oven and create the cookies shaping small balls of 1 cm diameter.
Place the cookies on the baking sheet lined with greaseproof paper and bake at 338°F for 25-30 minutes.
