Ottima da usare per condire la pasta al dente.
1 medium black truffle
1 clove of garlic
60 ml extra virgin olive oil
2 anchovy fillets
Clean the truffle with a small brush under the running water.
Cut and press it in the mortar.
Into a bowl cook the truffle with the olive oil, the chopped garlic and anchovies.
Salt and pepper.
Leave the pan over the low flame and blend to combine the ingredients.
Pay attention the sauce must not boil.
Continue the cooking until the sauce is thick.
The sauce it's perfect to flavour the pasta.
